Ingredients for 4 wraps:

  • 4 Romagna piadinas
  • 300g sliced chicken breast
  • 100 g of mixed salad (lettuce, rocket, radicchio)
  • 1 medium tomato
  • 1 cucumber
  • 1 small red onion
  • 150 g of Greek yogurt
  • Lemon juice to taste
  • Extra virgin olive oil to taste
  • Salt and Pepper To Taste.

  1. Cook the chicken: Grill the chicken breast over medium heat for about 5 minutes per side, until browned and cooked through. Cut the chicken into thin slices.
  2. Prepare the salad: Wash and dry the mixed salad. Cut the tomato, cucumber and red onion into thin slices.
  3. Make the Greek yogurt sauce: In a bowl, mix the Greek yogurt with the lemon juice, a drizzle of extra virgin olive oil, salt and pepper to taste.
  4. Filling the wraps: Heat the wraps in a non-stick pan for about 1 minute on each side. Spread a generous spoonful of Greek yogurt sauce on each piadina. Distribute the sliced chicken, mixed salad, tomato, cucumber and red onion.
  5. Roll up the wraps: Fold the edges of each piadina and roll up tightly, forming a cylinder.
  6. Serve: Cut the wraps in half diagonally and serve immediately.

  • For a more intense flavour, you can marinate the chicken before grilling it with a mix of spices of your choice, such as paprika, curry or aromatic herbs.
  • If you prefer, you can replace the mixed salad with just one type of vegetable, such as lettuce or rocket.
  • Add a pinch of crushed red pepper to the Greek yogurt sauce for a spicy touch.
  • You can enrich the wraps with other ingredients of your choice, such as avocado, olives, grilled peppers or feta cheese.
  • The wraps can be stored in the refrigerator for a day, wrapped in foil or cling film.

  • Tuna and vegetable wrap: Replace the chicken with 200g of drained canned tuna and add olives, capers and grilled peppers.
  • Tofu and vegetable wrap: Replace the chicken with 200 g of crumbled tofu and sautéed in a pan with a drizzle of oil and vegetables to taste.
  • Hummus and vegetable wrap: Spread the wraps with chickpea hummus and fill with grilled vegetables such as aubergines, courgettes and peppers.
