Piadina with roast turkey and salad: a quick and tasty lunch

The piadina with roast turkey and salad is a simple and quick recipe to prepare, perfect for a tasty lunch or dinner. It’s a great idea to use leftover roast turkey and make it even tastier.

Ingredients for 4 piadinas:

  • 4 Romagna piadinas
  • 200g roast turkey cut into slices
  • 100 g of green salad (lettuce, rocket, valerian)
  • 1 medium tomato
  • 1/2 red onion
  • Extra virgin olive oil to taste
  • Balsamic vinegar of Modena to taste
  • Salt and Pepper To Taste.

Preparation:

  1. Wash and dry the salad.
  2. Cut the tomato and onion into thin slices.
  3. Heat a griddle or non-stick pan over medium heat.
  4. Cook the piadine for 2-3 minutes on each side, turning them with tongs, until they are golden and puffy.
  5. Distribute the salad on the wraps.
  6. Add the turkey roast slices, tomato and onion.
  7. Season with a drizzle of extra virgin olive oil, Modena balsamic vinegar, salt and pepper to taste.
  8. Fold the piadine in half and serve hot.

Advice:

  • For a richer flavor, you can add a cream cheese, such as squacquerone or robiola.
  • If you like it spicy, you can add a pinch of chilli or chopped fresh chilli.
  • You can enrich the piadina with other ingredients, such as grilled peppers, olives or mushrooms.
  • The piadina with roast turkey and salad is excellent when eaten hot, but you can also prepare it in advance and heat it briefly before serving.
