• 1 piadina
  • 1 sausage
  • 1/2 white onion
  • 1 tablespoon extra virgin olive oil
  • Salt and Pepper To Taste.


  1. Peel the onion and cut it into thin slices.
  2. Heat the extra virgin olive oil in a non-stick pan over medium heat.
  3. Add the onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.
  4. Release the sausage from the casing and crumble it in the pan with the onion.
  5. Cook over medium-high heat for about 10 minutes, stirring occasionally, until the sausage is fully cooked and browned.
  6. Salt and pepper to taste.
  7. Heat the piadina in a non-stick pan over medium heat for about 1 minute per side.
  8. Fill the piadina with sausage and cooked onions.
  9. Fold the piadina in half or roll it up on itself.
  10. Cook the piadina for another minute on each side, until golden and crisp.
  11. Serve immediately.


  • If you prefer, you can add a little grated cheese to the piadina before filling it.
  • You can also cook the piadina in a preheated oven at 200°C for about 10 minutes.
  • For a spicier version, you can add a pinch of chili pepper to the cooking sausage.


  • Piadina with sausage, onions and peppers: add 1/2 green or red pepper cut into thin slices and cook together with the onion.
  • Piadina with sausage, onions and mushrooms: add 100 g of sliced champignon mushrooms and cook together with the onion.
  • Piadina with sausage, onions and mozzarella: add 50 g of sliced pizza mozzarella and fill the piadina after cooking the sausage and onions.
